B.D.T. Chicken Sandwich

The Inspiration…

You’ve heard of a BLT, but have you heard of BDT?

It stands for “Better than the Drive-Thru” and this chicken sandwich is just that. The chicken is juicy, smoky, and a little bit spicy. Top it with a slab of tomato, sliced onion, and some leafy greens. Then slather it with a sweet and creamy homemade honey mustard. This is what dreams are made of!

Well, here in Buffalo, it is the middle of April, and it is still snowing. I am dreaming of summer days where I can get out and enjoy the nice weather. One of my favorite things to do in the summer is enjoy a drink on the porch while I’m grilling up some dinner. This chicken sandwich is at the top of my list for summer dinners. I think you’ll enjoy it, too!

Let’s start by marinating our chicken. I use 6 boneless, skinless chicken thighs. The marinade is bursting with flavor. It is packed with smoked paprika, chili powder, cayenne, garlic powder, mustard powder, salt, apple cider vinegar, honey, and olive oil. I like to use Mike’s Hot Honey, but if you don’t have that, plain honey works well. Get that all mixed together and let it marinate in the fridge for at least an hour.

While the chicken marinates, whip up your honey mustard dressing. 1/2 cup of mayo, and a quarter cup each of yellow mustard and honey. I like to season it with a dash of garlic powder and a squeeze of lemon juice, but that is optional. It makes the perfect sweet accompaniment to the spicy and smoky chicken.

Once your chicken has marinated and soaked up all that flavor you can get it onto the grill. I cook my chicken thighs over medium heat for about 4-5 minutes on each side, until it reaches 165 degrees. I like to get a nice char on the edges. It really brings out that smokiness and adds depth of flavor.

Now all that is left to do is assemble your sandwich. I like to serve mine on a salted pretzel bun (because what goes better with honey mustard than a soft pretzel?!). But you can use whatever roll you prefer.

Layer the chicken, a slab of tomato, thinly sliced onion, a few pickle slices, and some leafy greens. My husband prefers his with a slice of cheese. We both slather the top bun with honey mustard. This recipe would be perfect for a barbeque, where people can build their own sandwich using their preferred toppings. Just make sure you make extra honey mustard sauce, because you’ll want to pour it over everything!

Ingredients

For the chicken
  • 6 boneless, skinless chicken thighs
  • 4-6 pretzel rolls, or other variety
  • 1 tsp smoked paprika
  • 1 tsp chili powder
  • 1/4 tsp cayenne pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp mustard powder
  • 1 tsp salt
  • 2 TBSP apple cider vinegar
  • 1 TBSP honey*
  • 1 TBSP olive oil
  • Lettuce, tomato, onion, pickles for serving (optional)
For the honey mustard
  • 1/2 cup mayonnaise
  • 1/4 cup yellow mustard
  • 1/4 cup honey
  • 1/4 tsp garlic powder (optional)
  • 1 TBSP lemon juice (optional)

Instructions

For the chicken
  1. Mix together your spices, olive oil, vinegar, and honey. Toss your chicken in the marinate to ensure all surface is covered. Cover and let marinate in the fridge for at least an hour.
  2. Cook chicken on the grill, over medium heat, for 4-5 minutes per side, or until the chicken reaches an internal temperature of 165 degrees.
  3. Let the chicken rest for about 5 minutes before serving.
  4. Layer chicken and toppings on your bun, top with honey mustard sauce.
For the honey mustard
  1. Mix together all of your ingredients.
  2. Store in the fridge.

Notes

*I like to use Mike's Hot Honey, but you can use regular honey as well.
