Coconut Rice
The Inspiration…
Who doesn’t love sticky coconut rice? Sometimes it is the perfect side dish for something spicy. Something about the sweetness and creaminess from the coconut that just pairs so well with spice. There was a restaurant in downtown Buffalo that closed a few years ago that would serve a spicy chili paste rubbed chicken thigh over a heaping mound of sweet coconut rice. It was divine.
I’ve tried coconut rice recipes that took hours to cook and quite frankly, the result didn’t seem worth the time and effort I put in. So, I made up this extremely easy and delicious Coconut Rice Recipe. Serve it alongside my Coconut Curry Mussels for the perfect sweet and spicy pairing.
Coconut Rice
Ingredients
- 1 cup basmati rice, dry
- 1 cup water
- 3/4 cup coconut milk
- 1/4 cup sugar
- 1 tsp salt
Instructions
- Place all your ingredients into a medium saucepan. Bring to a boil over medium high heat.
- Once it has reached a boil, put the lid on the pan and turn the heat down to low.
- Simmer for 15 minutes. Do not lift the lid.
- After 15 minutes, remove from heat and leave covered for 10 minutes.
- Serve.
