Garlicky Green Beans with Blistered Tomatoes

The Inspiration…

Have you ever bought a package of cherry tomatoes only to find them shriveled in their container at the end of the week? Same. And that, my friend, is the inspiration for this recipe. Wrinkly little tomatoes.

This recipe is a great way to use up those not-so-fresh tomatoes you have on your counter. The way they burst and cook down to become a sauce for the green beans will hide any trace that they were less than desirable. This recipe is very adaptable. Don’t have green beans? Try zucchini! I won’t hold it against you if your tomatoes aren’t wrinkly like mine. This works just as well with fresh ones! Use what you have, and it will be delicious!

This recipe is simple. Throw some olive oil, salt, green beans and tomatoes into a sauté pan and cook over medium heat for about 15 minutes. Make sure you stir them occasionally so that all the beans and tomatoes cook evenly.

After 10 minutes, reduce your heat to medium low and add in the garlic. By this time some of your tomatoes will have burst and a sauce will start to form. That’s it! I told you it was easy!

Serve alongside some fish, chicken, or one of my favs Hemp Crusted Pork.

These beans might be the easiest thing you've made lately, but that doesn't mean they are lacking in flavor. You'll want to make this quick and easy side dish for every occasion!

Ingredients

  • 8 oz French Green Beans, trimmed
  • 2 cloves garlic, minced
  • 1 1/2 cups cherry tomatoes
  • 1 TBSP olive oil
  • 1/4 tsp salt

Instructions

  1. Add the oil, beans, cherry tomatoes, and salt to a medium pan over medium heat. Stir to coat the beans in oil. Cook for 10 minutes, stirring occasionally, until the beans start to soften up and the tomatoes start to burst. Add in the garlic and cook for another 10 minutes over low heat.

Notes

* You can use chicken (or other) stock if not making this dish vegetarian.

** You can use 1 1/2 TBSP lemon juice mixed with 4 TBSP water in place of the white wine.


Serving suggestion: Serve topped with grilled shrimp or seared scallops.
