Mango Salsa

The Inspiration…

Seafood is one of my favorite things to eat. My husband and I have fish one or two nights per week, and I am always looking for new ways to prepare it. Sometimes you just need a quick and easy recipe to brighten up a meal, and THIS is that recipe. This salsa is a great go to for so many things! I love it with a broiled piece of white fish, or my Coconut Shrimp, or simply just eaten with tortilla chips! The flavors are bright with hints of sweetness, a little heat, and a nice tangy finish.

If you prefer to chop all the ingredients by hand, give it a whirl! I prefer to throw everything right into the food processor and then let it sit for a few hours so that all the flavors meld together. Do whatever floats your boat!! This recipe is great because it is very adaptable. Use whatever peppers, onions, or vinegars you have on hand. This is my favorite combination, but it is hard to mess this one up, I promise!

The first and only step is to put all the ingredients into your food processor and pulse until you have the consistency you like.

This recipe is so easy and flavorful. You can whip it up in a matter of minutes and it pairs well with a variety of foods from fish to chicken to chips!

Ingredients

  • 12 oz frozen mango chunks, thawed
  • 1/4 red onion
  • 1/2 - 1 jalapeño, to taste
  • 1/3 English cucumber
  • 2 TBSP white vinegar
  • 1/2 tsp salt

Instructions

  1. Add all ingredients to a food processor and pulse until you achieve the desired consistency.
  2. For best results, let sit for at least an hour to let the flavors absorb together.
