Creamy Chicken Wing Dip

The Inspiration…

Every good Buffalonian has their own version of Chicken Wing Dip. Here in the 716, we usually don’t have to distinguish what kind of wing. It is pretty much assumed it will be of Buffalo style. This dip recipe is one I’ve been making for years and has become a staple at every football party and holiday get together. I love it so much that when I was in college, I used to come home on the weekends to make a batch to take back to school with me. It is a winner!

The great thing about this recipe is that you can adapt it to your own tastes. If you don’t love hot wings, reduce the amount of Frank’s hot sauce. I can’t believe I’m going to say this, but if you don’t like blue cheese, *GASP*, you could replace it with ranch dressing. You can also make it easy on yourself and buy a rotisserie chicken rather than cooking your own. It comes together quickly and just needs to be heated up in the oven to get all the cheese nice and melty.

The classic taste of Buffalo Chicken Wings, made into a warm and creamy dip. Dig in with carrots and celery or try with a crunchy tortilla chip. This dip packs a punch and is loaded with chicken. It will make you feel like you're sitting at a tailgate!

Ingredients

  • 3 8oz bricks of cream cheese, softened
  • 3/4 cup Frank's hot sauce
  • 3/4 cup blue cheese dressing, divided
  • 1 cup colby jack, or other shredded cheese, divided
  • 3 stalks celery, diced
  • 3 cups chicken, shredded*

Instructions

  1. Preheat oven to 350 degrees.
  2. If you are cooking your own chicken: Season 2-3 chicken breasts with salt and pepper. Bake for about 20 minutes until cooked through. Shred.
  3. Beat together the cream cheese and hot sauce until smooth.
  4. Add in the celery, 1/2 cup of blue cheese, and 1/2 cup of colby jack cheese. Mix thoroughly.
  5. Add in the chicken and mix thoroughly. Turn into a casserole dish.
  6. Top with the remaining blue cheese and colby jack.
  7. Bake for about 20 minutes until the top cheese has melted and dip is bubbling.
  8. Serve with carrot and celery sticks, crackers, or tortilla chips.

Notes

*I have used rotisserie chicken for this recipe. I remove the skin and any very greasy dark meat first. I also make sure to remove any pieces that have hardened during the cooking process. Canned chicken would be another good option for a quick dip.
