Old-fashioned Ribbon Cookies

The Inspiration…

Tis the season for Christmas cookies! One of my favorite parts about the holidays is making all the recipes passed down to me from people I love. Isn’t it interesting that sometimes you can actually taste or smell a memory? Christmas cookies are one of those memories for me. The warm spicy smell of Molasses cookies baking. The fudgy chew of a Chocolate Crinkle. I can still remember swiping a few candied cherries while my grandma made these Ribbon Cookies. They’re composed of three separate layers, vanilla-sugar, chocolate-pecan, and cherry, that resemble a ribbon when layered together. I made this batch specially for my Grandma Liz. I’d dare say this might be her favorite Christmas cookie. Maybe it will be your new favorite, too!

To get started we will make one dough that we can flavor for all three sections. You’ll cream together your butter and sugar until fluffy. Then add in your eggs and vanilla and beat well. Then come your dry ingredients, flour, baking powder, and salt. Mix everything together until mixed thoroughly.

Now we can separate these into (approximately) three equal parts. One part we will leave as it is, the vanilla-sugar. The next part we will add in one square of unsweetened baker’s chocolate and some chopped pecans. The last part we will add in some chopped candied cherries and red food coloring (optional).

Once you have all three doughs ready to go, we can start assembling. In a small loaf pan (9x5x3) lined with parchment paper, press your vanilla-sugar dough so that it forms one even layer. Repeat this with the chocolate-pecan and then the cherry dough. Fold the edges of the parchment paper over the top and press firmly with your hands to ensure the three layers are packed tightly.

Chill this dough for at least 12 hours. Then remove the dough loaf from the pan by pulling up on the parchment paper. Slice the loaf down the center lengthwise to create two skinnier logs. Then slicing widthwise, cut into ¼ inch pieces.

Bake at 350 degrees for 8 minutes on an ungreased cookie sheet. Let them cool on the cookie sheet for 5 minutes before transferring them to a cooling rack to cool completely.
