Quick Tomato Sauce

The Inspiration…

This recipe was created out of necessity, for a couple of reasons. A few years ago, I completed a January Whole30. While I learned a lot about myself during that process, I also learned a lot about the food we buy and consume. It is amazing how many different ingredients (preservatives, sugars, food additives, chemicals, etc.) are added into the convenient foods we use every day. It was nearly impossible to find a sauce on the shelf of my grocery store that did not have sugar in it, which is a big no-no on whole30. I had a hankering for spaghetti (or rather spaghetti squash) and meatballs and so I decided to create my own tomato sauce so that it would be compatible with the food choices I was making. When I made this recipe during whole30 I omitted the sugar and used compatible oils, but pretty much everything else is the same.

I also realized that this sauce is totally adaptable to whatever type of sauce you’re in the mood for. Like chunky garden vegetable sauce? Add in some peppers and mushrooms. Maybe a blush style sauce is more your speed. Pour in a splash cream at the end. Sometimes I like things spicy and add a pinch (or two) of crushed red pepper flakes. You do you!

This sauce recipe is a great base for whatever flavors you are craving or whatever it is you have in your pantry and fridge. It also freezes beautifully. Sometimes I’ll make a batch and throw it right in my freezer for another time. Start by letting your onion and garlic sweat in a pot for a few minutes, before adding in your herbs and wine.

Let the herbs become fragrant and the wine reduce a bit before adding in your tomato products. If you like a sweet sauce, like my husband, add in a tablespoon of sugar. Go ahead, give this recipe a try but don’t be afraid to make it your own!

This quick tomato sauce comes together in a flash. Perfect for when you don't have a jar in the pantry or if you're trying to adapt your ingredients for what you have on hand!

Ingredients

  • 2 TBSP Olive Oil
  • 1 1/2 tsp salt (or to taste)
  • 1 cooking onion, finely diced
  • 3 garlic cloves, minced
  • 28 oz crushed tomatoes
  • 14.5 oz petite diced tomatoes
  • 15 oz plain tomato sauce
  • 1 TBSP sugar, optional
  • 2 tsp dried bail
  • 2 tsp dried oregano
  • 1/4 dry red wine, optional

Instructions

  1. Start by adding your olive oil, onion, garlic, and salt to a medium sized pot. Cook over medium heat for about 5-7 minutes until the onions start to sweat and become translucent.
  2. Add in your oregano, basil, and wine (if using). Cook for another 3 minutes.
  3. Add in your crushed and diced tomatoes as well as the sauce. Add in the sugar (if using). Cook for 10 minutes
  4. Use in your favorite pasta dishes or put in the freezer for later use.

Notes

This recipe is easily adaptable. Add in extras such as mushrooms and peppers for a Garden Vegetable sauce. Throw in a splash of cream at the end to make a blush sauce. If you like things a little spicy, add a pinch (or two) of crushed red pepper. It is a great base to make your own!
